I like to keep meals light if possible, especially during the lunch hour—my body gets sleepy when I'm digesting! This quick and fresh tartine is my natural go-to when heirloom tomatoes and avocados are in season, which fortunately is almost year-round in my sunny southern California town. We have many local farmers that plant fruit varieties that produce in alternating seasons, so we never have to go without avocados, tomatoes, and lemons! It's the dream.
I'm always a fan of simple, easy, and nourishing food. Living a healthy wholefood life doesn't always have to take hours of preparation. All it requires is keeping fresh quality ingredients in your pantry and fridge. Take a few hours of your week to stock up your kitchen with properly prepared bread and sprouted grains, quality meats and fish, and local, organic, and ripe produce. With these fresh ingredients available, I am able to whip up tasty treats like this tartine in under 10min. Follow the steps below for your own delicious tartine!
Tartines begin with freshly toasted bread. For my local friends, I am a passionate supporter of Prager Brothers Artisan Bread and use their artisan loaves exclusively in our home. It's the only non-gluten-free bread (or pastry) I trust. For those outside of San Diego, I highly recommend researching and sourcing a local bakery that follows a similar practice—traditional European baking methods. Key elements to look for or ask about are the use of organic, trustworthy, nutritious grains, a natural leavening rise/fermentation of the dough past 24 hours (most bakers will call this a sourdough loaf, but please note that just because it's called "sourdough" doesn't guarantee a natural leavening process or fermentation past 24 hours) and the freshness of the loaves (are you purchasing a loaf baked yesterday or this morning?). I'll dive more into this in another post, but hopefully these guidelines can help you get a jump start on finding a nutritious source for your daily bread. Whatever bread you do use, you'll love this tartine from the first crunchy buttery bite! It's such a favorite, I've even been known to take it on the go :)
+ 1/2 Organic Heirloom Tomato, sliced
+ 1/2 Avocado, pitted and sliced
+ 1/4 Organic Meyer Lemon
+ 2 Slices of Properly Prepared Bread, toasted
+ Slather of Golden Pastured Butter (Kerrygold is an easily sourced and reasonably priced option)
+ Cold-Pressed Virgin Olive Oil (I love TJ's Garlic Olive Oil)
+ Sprinkle of Chunky Celtic Sea Salt
Once you've toasted your bread, immediately slather on your golden pastured butter. Scoop out your avocado and fan out across your toasted bread. Place your sliced tomato on top. Squeeze the lemon over both tartines and follow with a drizzle of olive oil. For the finishing touch, top with chunky Celtic sea salt. Beautiful! Now, eat up :).
